Vegan Summer Roll…
Ingredients
  • 12-14 rice paper wrappers
  • 1/2 head of Napa cabbage, thinly sliced
  • 1/2 head of red cabbage, thinly sliced
  • 1 large carrot, grated
  • 1/2 red bell pepper, julienned
  • 1/2 cup cilantro leaves, chopped
  • 1/4 cup mint leaves, chopped
  • 1/4 cup basil leaves, chopped

Steps
  1. Soak one wrapper in warm water for 10-15 seconds until softened.
  2. Lay the wrapper flat on a cutting board and fill with 1 tablespoon each of the cabbage, carrot, bell pepper, cilantro, mint and basil.
  3. Fold the sides in towards the center and roll up tightly.
  4. Repeat with remaining wrappers and filling ingredients.
  5. Serve with peanut sauce.
