Ingredients
  • 1 package jumbo shells
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 2 cups vegan ricotta cheese
  • 2 cups vegan mozzarella cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon Italian seasoning

Steps
  1. Preheat oven to 350°F.
  2. Bring a large pot of salted water to a boil.
  3. Add the jumbo shells and cook according to package instructions.
  4. Drain and set aside.
  5. In a large skillet over medium heat, heat the olive oil.
  6. Add the onion and garlic and sauté until softened.
  7. In a large bowl, combine the ricotta cheese, mozzarella cheese, parsley and Italian seasoning.
  8. Stir in the sautéed onions and garlic.
  9. Fill each shell with about 2 tablespoons of the filling mixture.
  10. Arrange in an oven-safe baking dish and bake for 25 minutes or until golden brown.
