- 1 package jumbo shells
- 1 tablespoon olive oil
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 2 cups vegan ricotta cheese
- 2 cups vegan mozzarella cheese, shredded
- 1/4 cup fresh parsley, chopped
- 1 teaspoon Italian seasoning
- Preheat oven to 350°F.
- Bring a large pot of salted water to a boil.
- Add the jumbo shells and cook according to package instructions.
- Drain and set aside.
- In a large skillet over medium heat, heat the olive oil.
- Add the onion and garlic and sauté until softened.
- In a large bowl, combine the ricotta cheese, mozzarella cheese, parsley and Italian seasoning.
- Stir in the sautéed onions and garlic.
- Fill each shell with about 2 tablespoons of the filling mixture.
- Arrange in an oven-safe baking dish and bake for 25 minutes or until golden brown.
