Ingredients
  • 1/4 cup vegetable broth
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger root
  • 1/2 teaspoon sesame oil
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • 3 cups broccoli florets, cut into bite-size pieces
  • 1 red bell pepper, cut into thin strips
  • 1 onion, thinly sliced
  • 3/4 cup cashew pieces

Steps
  1. Heat the vegetable broth in a large skillet over medium heat. Add the soy sauce, garlic, ginger and sesame oil and stir to combine. Bring to a simmer.
  2. Add the cornstarch mixture and stir until thickened. Add the broccoli, bell pepper and onion and stir to combine.
  3. Cover and cook for 5 minutes or until vegetables are tender-crisp. Uncover and stir in the cashew pieces.
  4. Cook uncovered for an additional 3 minutes or until heated through.
