- 3 tablespoons sesame oil
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1 1/2 tablespoons fresh ginger, minced
- 6 cups vegetable broth
- 2 tablespoons low-sodium soy sauce or tamari
- 1 teaspoon Sriracha (optional)
- 6 ounces ramen noodles
- Heat the sesame oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and ginger and cook for another minute.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
- Stir in the soy sauce or tamari and Sriracha (if using). Taste and adjust seasoning if needed.
- Add the ramen noodles and cook for 5 minutes or until tender.
- Serve hot. Enjoy!
