Ingredients
  • 3 tablespoons sesame oil
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons fresh ginger, minced
  • 6 cups vegetable broth
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 teaspoon Sriracha (optional)
  • 6 ounces ramen noodles

Steps
  1. Heat the sesame oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger and cook for another minute.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.
  4. Stir in the soy sauce or tamari and Sriracha (if using). Taste and adjust seasoning if needed.
  5. Add the ramen noodles and cook for 5 minutes or until tender.
  6. Serve hot. Enjoy!
