- 1/2 cup cooked quinoa
- 1/2 cup cooked black beans
- 1/4 cup diced red onion
- 1/4 cup diced bell pepper
- 2 cloves garlic, minced
- 3 tablespoons chopped fresh parsley
- 3 tablespoons ground flaxseed
- 3 tablespoons water
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon cumin powder
- In a large bowl, combine the quinoa, black beans, red onion, bell pepper, garlic, parsley, flaxseed and water. Mix until evenly combined.
- Form the mixture into 4 patties and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook for 3 to 4 minutes per side or until golden brown.
- Serve with desired toppings.
