Vegan Quinoa Bowl
Ingredients
  • 1 cup uncooked quinoa
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 cup vegetable broth
  • 1 can black beans, drained and rinsed
  • 1/4 teaspoon chili powder

Steps
  1. In a medium saucepan, heat the vegetable broth over medium heat. Add the quinoa and onion, and cook for 5 minutes.
  2. Add the bell pepper, black beans, and chili powder. Cook for an additional 10 minutes or until the quinoa is cooked through.
  3. Serve warm with your favorite toppings.
