- 1 cup uncooked quinoa
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 cup vegetable broth
- 1 can black beans, drained and rinsed
- 1/4 teaspoon chili powder
- In a medium saucepan, heat the vegetable broth over medium heat. Add the quinoa and onion, and cook for 5 minutes.
- Add the bell pepper, black beans, and chili powder. Cook for an additional 10 minutes or until the quinoa is cooked through.
- Serve warm with your favorite toppings.
