Vegan Quesadillas
Ingredients
  • 4 large flour tortillas
  • 1/4 cup vegan cheese
  • 1 cup cooked black beans
  • 1/2 cup cooked corn
  • 1/2 tsp chili powder
  • salt and pepper, to taste

Steps
  1. Heat a large skillet over medium heat. Place one tortilla in the skillet and sprinkle with vegan cheese, beans, corn, chili powder, salt and pepper. Place another tortilla on top.
  2. Cook for 2-3 minutes until the bottom is golden brown. Flip and cook for another 2-3 minutes until golden brown.
  3. Repeat with remaining ingredients.
  4. Cut into wedges and serve.
