- 1/2 lb. dried rice noodles
- 1/4 cup peanut butter
- 1 tablespoon curry powder
- 1 teaspoon garlic powder
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions.
- In a small bowl, whisk together the peanut butter, curry powder, garlic powder, soy sauce and lime juice until combined.
- Once the noodles are cooked, drain them and add them back to the pot. Pour the peanut butter mixture over top and stir until evenly coated.
- Serve warm and enjoy!
