Vegan Peanut Butt…
Ingredients
  • 1/2 lb. dried rice noodles
  • 1/4 cup peanut butter
  • 1 tablespoon curry powder
  • 1 teaspoon garlic powder
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice

Steps
  1. Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions.
  2. In a small bowl, whisk together the peanut butter, curry powder, garlic powder, soy sauce and lime juice until combined.
  3. Once the noodles are cooked, drain them and add them back to the pot. Pour the peanut butter mixture over top and stir until evenly coated.
  4. Serve warm and enjoy!
