Vegan Palak Panee…
Ingredients
  • 1/2 cup extra-firm tofu, crumbled
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon garam masala
  • 3 cups fresh spinach leaves, chopped
  • 1/4 cup canned coconut milk

Steps
  1. In a large skillet over medium heat, heat the olive oil. Add the garlic and sauté for 1 minute.
  2. Add the crumbled tofu and cook for another 2 minutes.
  3. Add the cumin, coriander, turmeric, and garam masala. Stir to combine and cook for 1 minute.
  4. Add the spinach leaves and stir until wilted.
  5. Stir in the coconut milk and simmer for 3 minutes.
  6. Serve hot with cooked basmati rice or naan.
