Vegan Pad Thai
Ingredients
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup chopped shallots
  • 1 red bell pepper, cut into strips
  • 1/2 cup firm tofu, cubed
  • 3 tablespoons vegan fish sauce (or soy sauce)
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground turmeric
  • 3 cups cooked rice noodles

Steps
  1. Heat oil in a large skillet over medium heat. Add garlic and shallots and cook for 1 minute, stirring frequently. Add bell pepper and tofu and cook for 2 minutes.
  2. Add vegan fish sauce, brown sugar, chili powder and turmeric and stir to combine. Cook for 1 minute.
  3. Add cooked rice noodles and stir to combine. Cook for 2 minutes or until noodles are heated through.
  4. Serve immediately.
