Vegan Orange Frieā€¦
Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1 teaspoon minced garlic
  • 1/4 cup fresh orange juice
  • 2 cups cooked long grain white rice
  • 2 tablespoons vegan butter or margarine
  • 1/4 cup chopped fresh parsley

Steps
  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the onion and carrot and cook, stirring occasionally, until softened, about 5 minutes.
  3. Stir in the garlic and cook for 1 minute more.
  4. Add the orange juice and cook until it has reduced slightly, about 2 minutes.
  5. Stir in the cooked rice and vegan butter or margarine. Cook, stirring occasionally, until heated through, about 5 minutes.
  6. Stir in the parsley and season with salt and pepper to taste. Serve immediately.
