- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1 teaspoon minced garlic
- 1/4 cup fresh orange juice
- 2 cups cooked long grain white rice
- 2 tablespoons vegan butter or margarine
- 1/4 cup chopped fresh parsley
- Heat the oil in a large skillet over medium-high heat.
- Add the onion and carrot and cook, stirring occasionally, until softened, about 5 minutes.
- Stir in the garlic and cook for 1 minute more.
- Add the orange juice and cook until it has reduced slightly, about 2 minutes.
- Stir in the cooked rice and vegan butter or margarine. Cook, stirring occasionally, until heated through, about 5 minutes.
- Stir in the parsley and season with salt and pepper to taste. Serve immediately.
