Vegan Lentil Soup
Ingredients
  • 1 cup dry lentils
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Steps
  1. In a large pot, add the lentils and cover with water. Bring to a boil and reduce heat to low. Simmer for 15 minutes.
  2. Meanwhile, in a skillet over medium heat, cook the onion and garlic until softened.
  3. Add the vegetable broth, tomatoes, tomato paste, cumin and oregano to the pot with the lentils. Stir until combined.
  4. Bring to a boil then reduce heat to low. Simmer for 20 minutes or until lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve warm.
