- 1 cup green lentils
- 1/2 cup uncooked white rice
- 2 cloves garlic, minced
- 1 onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon cumin powder
- In a medium saucepan, add the lentils, rice, garlic, onion, celery, carrots and vegetable broth.
- Bring to a boil over medium-high heat and reduce to a simmer.
- Cook for about 30 minutes until the lentils and rice are tender.
- Add the oregano and cumin powder and stir to combine.
- Serve hot.
