- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 cups dried green lentils
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- ½ teaspoon ground turmeric
- ¼ teaspoon cayenne pepper (optional)
- 4 cups vegetable broth or water
- Salt and pepper to taste
- In a large pot over medium heat, sauté the onion and garlic in the olive oil until the onion is translucent.
- Add the lentils, cumin, garam masala, turmeric and cayenne pepper. Stir to combine.
- Add the vegetable broth or water and bring to a boil. Reduce heat to low and simmer for 25-30 minutes or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot.
