- 1 cup cooked lentils
- 1/2 cup cooked quinoa
- 1/2 cup cooked brown rice
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 3 tablespoons diced carrot
- 3 tablespoons diced bell pepper
- 2 cloves garlic, minced
- 2 tablespoons ground flaxseed
- 3 tablespoons nutritional yeast flakes
- 3 tablespoons chopped parsley leaves
- In a large bowl, combine the lentils, quinoa, brown rice, red onion, celery, carrot, bell pepper and garlic.
- In a small bowl, mix together the ground flaxseed, nutritional yeast flakes and parsley.
- Add the flaxseed mixture to the large bowl and stir until all ingredients are evenly distributed.
- Form into 4 patties and cook in a lightly greased skillet over medium heat for 5 minutes on each side.
- Serve on vegan buns with your favorite toppings.
