Vegan Lentil Burg…
Ingredients
  • 1 cup cooked lentils
  • 1/2 cup cooked quinoa
  • 1/2 cup cooked brown rice
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 3 tablespoons diced carrot
  • 3 tablespoons diced bell pepper
  • 2 cloves garlic, minced
  • 2 tablespoons ground flaxseed
  • 3 tablespoons nutritional yeast flakes
  • 3 tablespoons chopped parsley leaves

Steps
  1. In a large bowl, combine the lentils, quinoa, brown rice, red onion, celery, carrot, bell pepper and garlic.
  2. In a small bowl, mix together the ground flaxseed, nutritional yeast flakes and parsley.
  3. Add the flaxseed mixture to the large bowl and stir until all ingredients are evenly distributed.
  4. Form into 4 patties and cook in a lightly greased skillet over medium heat for 5 minutes on each side.
  5. Serve on vegan buns with your favorite toppings.
