Vegan Lasagna
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 3 cups cooked lentils
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 2 tablespoons tomato paste
  • 2 tablespoons Italian seasoning
  • 1 teaspoon sea salt

Steps
  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish with olive oil.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
  3. Add the zucchini and bell pepper and cook until softened.
  4. Stir in the cooked lentils, diced tomatoes, tomato paste, Italian seasoning and salt.
  5. Pour into prepared baking dish and spread evenly.
  6. Bake for 25 minutes. Serve warm.
