Vegan Fried Rice
Ingredients
  • 2 cups cooked long grain white rice
  • 1 tablespoon vegetable oil
  • 1/2 red onion, diced
  • 1/2 red pepper, diced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce or tamari, divided
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 3 minutes.
  2. Add the garlic and cook for another minute.
  3. Add the cooked rice and stir to combine.
  4. Add 2 tablespoons of soy sauce, ginger, garlic powder, and black pepper. Stir to combine.
  5. Continue cooking until everything is heated through. Add more soy sauce if desired.
  6. Serve hot.
