Vegan Fajitas
Ingredients
  • 1/2 onion, sliced
  • 1 bell pepper, sliced
  • 1 jalapeno pepper, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Steps
  1. Heat the olive oil in a large skillet over medium heat. Add the onions, bell peppers, jalapeno peppers and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, chili powder, paprika and salt and pepper. Cook for an additional 2 minutes.
  3. Serve with warm tortillas or rice.
