Ingredients
  • 1 large eggplant, sliced into 1/4-inch thick rounds
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 (15-ounce) can tomato sauce
  • 2 tablespoons vegan Parmesan cheese, grated (optional)
  • 3 ounces vegan mozzarella cheese, grated (optional)

Steps
  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the eggplant slices with the olive oil, garlic, oregano, salt and pepper. Toss until evenly coated.
  3. Arrange the eggplant slices on the prepared baking sheet in a single layer.
  4. Bake for 20 minutes or until lightly browned and tender.
  5. Spread 1/4 cup of tomato sauce on the bottom of an 8x8-inch baking dish.
  6. Arrange half of the cooked eggplant slices over the sauce.
  7. Spread another 1/4 cup of tomato sauce over the eggplant slices and sprinkle with half of the vegan Parmesan cheese and mozzarella cheese.
  8. Repeat layering process with remaining eggplant slices, tomato sauce and cheeses.
  9. Bake for 20 minutes or until hot and bubbly.
