- 1 cup all-purpose flour
- 1 cup white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup coconut milk
- 1/3 cup vegetable oil
- 2 teaspoons vanilla extract
- Preheat oven to 350 degrees F (175 degrees C).
- Grease and flour one 9 inch round cake pan.
- In a medium bowl, mix together the flour, sugar, baking powder, baking soda and salt.
- In a separate bowl, combine the coconut milk, oil and vanilla.
- Stir wet ingredients into dry ingredients until just blended.
- Pour batter into prepared pan.
- Bake in preheated oven for 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
