Vegan Coconut Cake
Ingredients
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup coconut milk
  • 1/3 cup vegetable oil
  • 2 teaspoons vanilla extract

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease and flour one 9 inch round cake pan.
  3. In a medium bowl, mix together the flour, sugar, baking powder, baking soda and salt.
  4. In a separate bowl, combine the coconut milk, oil and vanilla.
  5. Stir wet ingredients into dry ingredients until just blended.
  6. Pour batter into prepared pan.
  7. Bake in preheated oven for 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
