Vegan Chili-Chees…
Ingredients
  • 1/2 teaspoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 (15-ounce) can chili (vegan or vegetarian)
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 (8-ounce) bag tortilla chips
  • 3/4 cup vegan cheese shreds

Steps
  1. Preheat oven to 375°F. Heat oil in a large skillet over medium heat. Add onion, bell pepper, and garlic and cook until softened, about 5 minutes. Add chili, cumin, salt, and pepper and cook until heated through, about 5 minutes.
  2. Spread chips on a large baking sheet. Top with chili mixture then sprinkle with vegan cheese.
  3. Bake for 10-12 minutes until cheese is melted and bubbly.
  4. Serve hot.
