Vegan Chili
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 3 cups cooked black beans or 2 (15 oz) cans black beans, drained and rinsed
  • 2 cups vegetable broth or water
  • 1 (14.5 oz) can diced tomatoes with their juice

Steps
  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the chili powder, cumin, oregano, smoked paprika and cayenne pepper (if using). Stir to combine.
  3. Add the black beans, vegetable broth or water and diced tomatoes with their juice. Stir to combine.
  4. Bring to a boil then reduce heat to low and simmer for 15 minutes.
  5. Serve with desired toppings such as chopped onions, shredded cheese or sour cream.
