- 1 can black beans
- 1 cup cooked brown rice
- 1/2 cup diced tomatoes
- 1/2 cup diced onions
- 1/4 cup diced bell peppers
- 1/4 cup corn kernels
- 1/4 cup diced jalapenos (optional)
- 3-4 large tortillas
- Heat a large skillet over medium heat. Add the onions and bell peppers and sauté for 4-5 minutes, until softened.
- Add the black beans, tomatoes, corn, jalapenos (if using), and cooked rice. Stir to combine and cook for an additional 5 minutes.
- Warm the tortillas in a separate skillet or microwave for 30 seconds.
- Divide the burrito filling among the tortillas and roll up. Serve with your favorite toppings.
