Vegan Burritos
Ingredients
  • 1 can black beans
  • 1 cup cooked brown rice
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 cup corn kernels
  • 1/4 cup diced jalapenos (optional)
  • 3-4 large tortillas

Steps
  1. Heat a large skillet over medium heat. Add the onions and bell peppers and sauté for 4-5 minutes, until softened.
  2. Add the black beans, tomatoes, corn, jalapenos (if using), and cooked rice. Stir to combine and cook for an additional 5 minutes.
  3. Warm the tortillas in a separate skillet or microwave for 30 seconds.
  4. Divide the burrito filling among the tortillas and roll up. Serve with your favorite toppings.
