- 1 can black beans
- 1 can corn
- 1 red bell pepper, diced
- 1 cup cooked brown rice
- 1/4 cup chopped cilantro
- 1/2 lime, juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
- In a medium saucepan, heat the beans and corn over medium heat.
- Add the bell pepper and cook for an additional 5 minutes.
- In a large bowl, combine the cooked beans, corn and bell pepper with the cooked rice.
- Stir in the cilantro, lime juice, olive oil and season with salt and pepper to taste.
- Serve warm or cold.
