Vegan Burrito Bow…
Ingredients
  • 1 can black beans
  • 1 can corn
  • 1 red bell pepper, diced
  • 1 cup cooked brown rice
  • 1/4 cup chopped cilantro
  • 1/2 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. In a medium saucepan, heat the beans and corn over medium heat.
  2. Add the bell pepper and cook for an additional 5 minutes.
  3. In a large bowl, combine the cooked beans, corn and bell pepper with the cooked rice.
  4. Stir in the cilantro, lime juice, olive oil and season with salt and pepper to taste.
  5. Serve warm or cold.
