Vegan Buddha Bowl
Ingredients
  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/2 cup cooked chickpeas
  • 1/2 cup roasted sweet potatoes
  • 1/2 cup roasted broccoli florets
  • 1/4 cup diced red onion

Steps
  1. Preheat oven to 375°F.
  2. Toss sweet potatoes and broccoli with olive oil, salt, and pepper.
  3. Spread vegetables on a baking sheet and roast for 15-20 minutes.
  4. Meanwhile, cook quinoa according to package instructions.
  5. Assemble bowl by adding quinoa, black beans, chickpeas, roasted vegetables, and red onion to a bowl. Enjoy!
