- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (28-ounce) can crushed tomatoes
- 15 ounces vegan ricotta cheese or vegan cream cheese (see notes)
- 2 cups cooked ziti pasta (see notes)
- Preheat oven to 375°F. Grease a 9x13-inch baking dish with oil.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Stir in the garlic, tomato paste, Italian seasoning, salt and pepper. Cook for 1 minute more.
- Add the crushed tomatoes to the pan and bring to a simmer. Simmer for 10 minutes.
- In a large bowl, stir together the ricotta cheese or cream cheese and cooked ziti.
- Pour half of the tomato sauce into the prepared baking dish. Top with all of the ziti mixture and spread into an even layer.
- Top with remaining sauce and spread into an even layer. Cover tightly with foil.
- Bake covered for 25 minutes. Uncover and bake for an additional 15 minutes until bubbly.
- Let cool for 10 minutes before serving.
