Vegan Baked Ziti
Ingredients
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (28-ounce) can crushed tomatoes
  • 15 ounces vegan ricotta cheese or vegan cream cheese (see notes)
  • 2 cups cooked ziti pasta (see notes)

Steps
  1. Preheat oven to 375°F. Grease a 9x13-inch baking dish with oil.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  3. Stir in the garlic, tomato paste, Italian seasoning, salt and pepper. Cook for 1 minute more.
  4. Add the crushed tomatoes to the pan and bring to a simmer. Simmer for 10 minutes.
  5. In a large bowl, stir together the ricotta cheese or cream cheese and cooked ziti.
  6. Pour half of the tomato sauce into the prepared baking dish. Top with all of the ziti mixture and spread into an even layer.
  7. Top with remaining sauce and spread into an even layer. Cover tightly with foil.
  8. Bake covered for 25 minutes. Uncover and bake for an additional 15 minutes until bubbly.
  9. Let cool for 10 minutes before serving.
