Ingredients
  • 1 pound elbow macaroni
  • 1/4 cup vegan butter
  • 1/4 cup all-purpose flour
  • 3 cups unsweetened almond milk
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 1/2 cups vegan cheddar cheese, divided

Steps
  1. Preheat oven to 375°F.
  2. Cook macaroni according to package instructions.
  3. Melt butter in a medium saucepan over medium heat.
  4. Add flour and whisk until combined and bubbly.
  5. Gradually add almond milk, whisking constantly until sauce thickens.
  6. Stir in mustard, garlic powder, onion powder, paprika, and 1 cup of the vegan cheese.
  7. Drain cooked macaroni and add to the cheese sauce. Stir until combined.
  8. Transfer macaroni to a 9x13-inch baking dish and top with remaining 1 1/2 cups of vegan cheese.
  9. Bake for 25 minutes or until cheese is melted and bubbly.
