Vanilla Cupcakes …
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 3/4 cup butter, melted and cooled slightly
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup buttermilk, at room temperature

Steps
  1. Preheat the oven to 350°F (177°C). Line two 12-cup muffin pans with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda and salt for 20 seconds, set aside.
  3. In a medium bowl, whisk together the sugar and melted butter until combined.
  4. Whisk in the eggs, one at a time until combined.
  5. Whisk in the vanilla extract and buttermilk until combined.
  6. Add the wet ingredients to the dry ingredients and mix together with a rubber spatula or wooden spoon until *just* combined. Do not overmix.
  7. Divide batter evenly among muffin tins (about 1/4 cup of batter each). Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting.
