Udon Noodle Soup …
Ingredients
  • 2 Tbsp. vegetable oil
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1 (4-inch) piece of fresh ginger, peeled and grated
  • 2 tsp. red chili flakes
  • 1/4 cup miso paste
  • 4 cups vegetable broth
  • 3 cups water
  • 1 (8-ounce) package udon noodles

Steps
  1. Heat the oil in a large pot over medium heat.
  2. Add the onion, garlic, ginger and chili flakes and cook for 3 minutes.
  3. Stir in the miso paste until it is fully incorporated.
  4. Add the vegetable broth and water and bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Stir in the udon noodles and cook for an additional 5 minutes or until noodles are cooked through.
