- 2 Tbsp. vegetable oil
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 1 (4-inch) piece of fresh ginger, peeled and grated
- 2 tsp. red chili flakes
- 1/4 cup miso paste
- 4 cups vegetable broth
- 3 cups water
- 1 (8-ounce) package udon noodles
- Heat the oil in a large pot over medium heat.
- Add the onion, garlic, ginger and chili flakes and cook for 3 minutes.
- Stir in the miso paste until it is fully incorporated.
- Add the vegetable broth and water and bring to a boil.
- Reduce heat to low and simmer for 10 minutes.
- Stir in the udon noodles and cook for an additional 5 minutes or until noodles are cooked through.
