- 2 sweet potatoes, peeled and cut into cubes
- 1 lb carrots, peeled and cut into cubes
- 1/2 cup honey
- 1/4 cup orange juice
- 1/4 cup vegetable oil or melted margarine
- 1 apple, peeled and cut into cubes
- 1/2 cup raisins
- Preheat oven to 350°F.
- In a large bowl, combine sweet potatoes, carrots, honey, orange juice and oil or margarine.
- Mix until all ingredients are well blended.
- Spread mixture in a greased 9x13 inch baking dish.
- Bake for 45 minutes or until vegetables are tender.
- Add apples and raisins to the dish and bake an additional 15 minutes.
- Serve hot.
