Twice-Baked Sweet…
Ingredients
  • 4 large sweet potatoes
  • 4 tablespoons butter, melted
  • 1/2 cup packed light brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Steps
  1. Preheat oven to 350 degrees F.
  2. Pierce sweet potatoes with a fork and bake for 1 hour or until tender.
  3. Cut sweet potatoes in half lengthwise and scoop out the insides into a large bowl.
  4. Add butter, brown sugar, cream, cinnamon, and nutmeg to the bowl and mash together until well combined.
  5. Spoon mixture into the potato skins.
  6. Bake for an additional 20 minutes or until lightly golden brown.
  7. Serve warm.
