Twice-Baked Potato
Ingredients
  • 4 large baking potatoes
  • 2 tablespoons butter
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese
  • 4 slices bacon, cooked and crumbled

Steps
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Scrub potatoes and pierce several times with a fork.
  3. Bake for 1 hour, or until tender.
  4. Let potatoes cool for 10 minutes before handling.
  5. Cut potatoes in half lengthwise and scoop out insides, leaving a thin shell.
  6. In a bowl, mash potato insides with butter, sour cream, cheese, and bacon.
  7. Fill potato shells with the mixture and bake an additional 20 minutes.
