- 4 large baking potatoes
- 2 tablespoons butter
- 1/2 cup sour cream
- 1/2 cup shredded cheese
- 4 slices bacon, cooked and crumbled
- Preheat oven to 350 degrees F (175 degrees C).
- Scrub potatoes and pierce several times with a fork.
- Bake for 1 hour, or until tender.
- Let potatoes cool for 10 minutes before handling.
- Cut potatoes in half lengthwise and scoop out insides, leaving a thin shell.
- In a bowl, mash potato insides with butter, sour cream, cheese, and bacon.
- Fill potato shells with the mixture and bake an additional 20 minutes.
