Twice Baked Potat…
Ingredients
  • 4 large potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup butter, melted
  • 2 tablespoons chopped chives

Steps
  1. Preheat oven to 375°F.
  2. Scrub potatoes and pierce with a fork.
  3. Bake for 1 hour or until tender.
  4. Cut potatoes in half lengthwise and scoop out the insides, leaving a thin layer of potato on the skin.
  5. In a medium bowl, mash the potato with sour cream, cheese, butter and chives.
  6. Spoon the mixture back into the potato skins.
  7. Bake for an additional 20 minutes or until golden brown.
