Twice Baked Potat…
Ingredients
  • 4 large baking potatoes
  • 1/2 cup butter, softened
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 slices bacon, cooked and crumbled
  • 3 tablespoons grated Parmesan cheese

Steps
  1. Preheat oven to 375°F. Scrub potatoes and pierce each several times with a fork.
  2. Bake for 1 hour or until tender. Cut each potato in half lengthwise and scoop out the pulp, leaving a thin shell.
  3. In a small bowl, combine the butter, sour cream, garlic powder, salt and pepper; mix well. Stir in bacon and mashed potato pulp.
  4. Spoon the mixture into the potato shells. Sprinkle with Parmesan cheese.
  5. Bake for 20 minutes or until heated through.
  6. Serve immediately.
