- 1 lb. ground turkey
- 1/4 cup taco seasoning
- 1/4 cup water
- 2 cups romaine lettuce, chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup black beans, drained and rinsed
- 1/4 cup red onion, diced
- 1/2 avocado, diced
- 3 Tbsp. cilantro, chopped
- In a large skillet over medium-high heat, cook the ground turkey until no longer pink. Drain any excess fat.
- Add the taco seasoning and water to the skillet and stir until combined.
- Let simmer for 5 minutes or until all liquid is absorbed.
- In a large bowl combine the lettuce, tomatoes, black beans, red onion and avocado.
- Top with the cooked turkey and sprinkle with cilantro.
- Serve immediately.
