- 1 lb ground turkey
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 2 carrots, diced
- 3 stalks celery, diced
- 4 cups chicken broth
- In a large pot over medium heat, add the olive oil and ground turkey. Cook until the turkey is no longer pink.
- Add in the onion, garlic and thyme. Cook for 5 minutes.
- Stir in the carrots and celery. Cook for an additional 5 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
- Serve hot.
