Tuna Nicoise Salad
Ingredients
  • 1 head of Romaine lettuce, chopped
  • 2-3 cups cooked small potatoes, cut in half
  • 1/2 cup red onion, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 cans tuna in water, drained
  • 1/4 cup Kalamata olives, pitted and halved
  • 8 cherry tomatoes, halved
  • 4 hard boiled eggs, quartered

Steps
  1. In a large bowl, combine the lettuce and potatoes. Top with red onion and green onions.
  2. In a separate bowl mix together the parsley, tuna and olives. Gently stir into the salad.
  3. Top with tomatoes and eggs.
  4. Serve with your favorite dressing.
