Ingredients
  • 4 eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 cups salad greens, washed and dried
  • 1/4 cup shredded cheese

Steps
  1. In a bowl, whisk together eggs, milk, salt and pepper.
  2. Melt butter in a skillet over medium heat.
  3. Add egg mixture to the skillet. Cook while stirring constantly until eggs are scrambled and cooked through.
  4. In a large bowl, combine salad greens and cheese.
  5. Divide salad onto two plates. Top each plate with scrambled eggs.
