Tomato Basil Pest…
Ingredients
  • 1/2 lb. linguine
  • 1/4 cup olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 cups cherry tomatoes, halved
  • 3 tablespoons chopped fresh basil leaves

Steps
  1. Bring a large pot of lightly salted water to a boil. Add linguine and cook for 8 to 10 minutes or until al dente; drain.
  2. In a blender or food processor, combine olive oil, Parmesan cheese, pine nuts, garlic, salt and pepper; process until blended.
  3. In a large bowl, combine cooked linguine with the pesto sauce. Gently stir in cherry tomatoes and basil.
  4. Serve at room temperature or chilled.
