Tomatillo Enchila…
Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 3 tomatillos, husked and chopped
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon chili powder
  • 1/2 cup chicken broth or vegetable broth
  • Salt and pepper to taste

Steps
  1. Heat the oil in a large skillet over medium heat.
  2. Add the onion, garlic and jalapeno pepper. Cook for about 5 minutes until the vegetables are soft.
  3. Add the tomatillos, cumin, oregano and chili powder. Cook for another 5 minutes.
  4. Pour in the chicken or vegetable broth and bring to a boil.
  5. Reduce heat to low and simmer for 10 minutes.
  6. Season with salt and pepper to taste.
  7. Transfer to a blender or food processor and blend until smooth.
  8. Serve warm with enchiladas or tacos.
