Tofu Tacos
Ingredients
  • 1/2 lb. extra-firm tofu
  • 2 tablespoons vegetable oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 8 small flour or corn tortillas

Steps
  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Crumble the tofu into a medium bowl. Add the oil, chili powder, cumin, garlic powder, onion powder, smoked paprika and season with salt and pepper.
  3. Mix until everything is evenly combined.
  4. Spread the tofu mixture onto the prepared baking sheet and spread into an even layer.
  5. Bake for 15 minutes or until golden brown.
  6. To assemble tacos: Heat tortillas in a skillet over medium heat. Fill each taco with the cooked tofu, desired toppings (avocado slices, diced tomatoes, shredded lettuce) and serve immediately.
