Tofu Stir Fry
Ingredients
  • 1 package extra-firm tofu
  • 2 tablespoons sesame oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated or minced
  • 2 tablespoons soy sauce or tamari
  • 1 teaspoon rice vinegar

Steps
  1. Press the tofu for at least 15 minutes. Cut into cubes.
  2. Heat the sesame oil in a large skillet over medium heat.
  3. Add the onion, bell pepper and garlic and sauté until softened.
  4. Add the tofu cubes and ginger and cook until golden brown.
  5. Add the soy sauce or tamari and rice vinegar and cook for an additional 2 minutes.
  6. Serve hot.
