Tofu Salad
Ingredients
  • 1 package extra-firm tofu
  • 2 tablespoons olive oil
  • 1/4 cup white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 cups cooked quinoa or brown rice

Steps
  1. Drain the tofu and pat dry with paper towels.
  2. Cut the tofu into cubes.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown, about 5 minutes.
  4. In a small bowl, whisk together the vinegar, mustard, salt, and pepper. Pour over the tofu and toss to coat.
  5. Add the parsley and cooked quinoa or brown rice to the skillet. Toss to combine and heat through.
  6. Serve warm.
