Ingredients
  • 2 cups old-fashioned rolled oats
  • 1/2 cup chopped almonds
  • 1/4 cup honey
  • 1/4 cup packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons coconut oil, melted and cooled slightly
  • 1 teaspoon pure vanilla extract
  • 2/3 cup sweetened shredded coconut, toasted

Steps
  1. Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, combine oats, almonds, honey, brown sugar, cinnamon and salt.
  3. Add coconut oil and vanilla extract; stir until evenly combined.
  4. Spread mixture into prepared pan. Bake for 20 minutes or until golden brown.
  5. Remove from oven and sprinkle the toasted coconut over the top. Gently press the coconut into the bars.
  6. Allow bars to cool completely in pan before cutting into 12 bars.
  7. Store in an airtight container for up to 1 week.
